【Shanghai】Meat floss and cucumber egg rolls
Overview
Egg rolls, which we call egg lanterns here, are a traditional dish in our cuisine. The finished egg skins are golden in color and each one is shaped like a gold bar. Every household will make it during the Chinese New Year. The traditional filling is minced pork. During the Chinese New Year, I made two flavors, one is minced pork, and the other is this flavor. The wonderful taste of meat floss and salad dressing plus the crispness and refreshing taste of cucumber. It was completely gone as soon as it was served. Fortunately, I ate the leftovers when I cut it, otherwise I would not know what it tasted like.

Cucumber and duck eggs

Prepare meat floss and salad dressing

Wash and cut the cucumber, remove the seeds and then cut it into strips. Crack the duck eggs into a bowl and mix well

Heat a non-stick pan, apply a little oil, add a spoonful of egg liquid and cook over low heat until the egg liquid solidifies and then take it out (I have a large pan and made 2 egg skins)

After the egg skin has cooled down, add a cucumber strip, squeeze in the salad dressing and then add the pork floss

Add a cucumber strip on top
