Overview
Meringue is made purely from egg whites and is baked at low temperature for a long time. It is crispy and delicious and melts in your mouth. It is great to eat alone or as a dessert, or with coffee.

Put the egg whites, caster sugar, and water into a mixing bowl together;

Place the egg beater in hot water at 50 degrees Celsius, heat the hot water, and beat the egg whites at high speed;

When the temperature of the egg whites is similar to that of your hands, turn off the hot water in the egg beater and continue beating at high speed;

Play until the state in the picture is reached;

Put the meringue into a piping bag;

The meringue is squeezed onto the baking sheet;

Just enough to fill a plate;

Place in a preheated oven at 100 degrees and bake for one hour and 20 minutes. Do not take out the baking pan then, turn off the heat and continue to simmer;

Simmer until the meringue becomes crispy, take it out and seal it for storage.
