Salt and pepper golden cicada
Overview
Golden cicada, also called cicada monkey, or turtle in my hometown of Xuzhou, is an insect containing protein, fat, calcium, phosphorus, iron, multiple vitamins, trace elements and rich amino acids. Every summer, it often appears on the dining tables of Xuzhou people. It is a delicacy that is rich in nutrients, delicious and has very high medicinal value. The main methods are fried and salt and pepper. Fried golden cicada is the most common way to eat it. The method is very simple. Put more oil in the pot. When it is 50% to 60% hot, pour in the cleaned golden cicada, fry over low heat until golden brown, remove the oil and sprinkle with salt. The salt-and-pepper cicada just has more seasonings than the fried version, and the taste is richer, and the preparation is just as simple.
