Whitebait egg custard
Overview
For making whitebait and egg custard, I would also like to thank a good friend of mine, his name is Jindong. We both studied in the same university and the same major as undergraduates. After graduation, we came to the same unit and were assigned to the same dormitory. Dried whitebait Jindong brought it from his hometown in Anhui. It is a specialty there and a local delicacy that Jindong is proud of. He said that whitebait lives in freshwater lakes, is about three centimeters long, is white and transparent, has no phosphorus in its body, and is delicious. Every year, many of them are prepared at home to make dishes. In order for us to try it, I brought a bag full of dried whitebait from home. Jindong and I were in the same dormitory. Because cooking was not allowed in the dormitory before, we always went to the homes of two other colleagues to cook on Saturdays and Sundays. The four of us had a relatively good relationship. The dried whitebait that Jindong brought was always kept at the homes of the other two colleagues. However, the two colleagues didn't like eating dried whitebait very much, and they didn't know how to make it, so the dried whitebait that Jindong brought was kept on the shelf. Later, I was able to cook in the dormitory. My colleagues said that no one would eat the dried whitebait in our place, so they wanted to throw it away. I said bring me some, it would be a pity to throw them away (it’s a pity that Jindong brought them all the way from home). After my colleague brought me the dried whitebait, I tried many ways to make it. In the end, I felt that whitebait egg custard was the most suitable, with good taste and texture. Now every morning when I wake up, I steam a bowl and add some staple food and side dishes as my own breakfast. It's a pity that Jindong went abroad very early due to project needs, and he hasn't been able to taste the delicacies made by the whitebait he brought. Jindong, when you come back, if I have a chance, I will definitely steam a bowl of whitebait and egg custard for you...
