Squid Rings and Stewed Tofu
Overview
Sometimes I wake up early in the morning and go to the construction site with my husband to inspect, but I still send the children to kindergarten first. It takes a long morning after arriving at the construction site, and it's often time to go home for dinner. I don't rush to make something delicious. I just fry two side dishes to go with the meal. There are still relatively few people who are not working on the construction site, but when they are not working on the construction site, they have time to cook a few side dishes. Occasionally I make some soup to go with my rice, but there are still relatively few soups that are as delicious as the vegetables. I didn’t go to the construction site with my husband today so I spent some time cooking some tofu soup

Ingredients: 1 squid, 4 slices of fried tofu (thick), 500g leg meat, 250g coriander, 1 chive, 1 piece of ginger, a small piece of seasoning: steamed fish drum oil, appropriate amount of cooking wine, appropriate amount of salt, appropriate amount of chicken essence

Chop the leg meat into minced meat, slice the ginger and chives into sections, wash the squid and cut into rings, dig holes in the thick tofu and set aside

Pour the minced meat and chives into a large bowl, add cooking wine, chicken essence and salt (add according to personal taste)

Fill the tofu with the seasoned minced meat

Pour the squid rings into boiling water and blanch them for 8 minutes, remove and set aside

Put the ginger slices into the oil pan and saute until fragrant. Pour in the boiling water

Add cooking wine

Add steamed fish drum oil until boiling and set aside

Put the prepared minced meat tofu and squid rings into the casserole

Pour in the cooked soup and simmer for 30 minutes before serving
