Insert a toothpick into the seam between the second and third sections and pick out the shrimp thread

Peel off the shrimp shells, wash them and drain them. Make a cut on the back of the shrimp without cutting it off.

Add 3-4 tablespoons of cornstarch/starch and spread evenly

Add a little more oil to the pan than for frying the fish. After the oil is heated over high heat, put the shrimps covered with starch in the pan one by one until the shrimps become hard and golden

Clamp it up and cover with absorbent paper.

Pour out the remaining oil in the pot, wipe the bottom of the pot with paper towels, turn on medium heat, put the shrimp back in the pot, sprinkle with salt and pre-fried minced garlic, or sprinkle with salt and pepper and shredded chili pepper. Stir fry for a few times and it’s ready

Serve on a plate and sprinkle with chopped green onion
