Prepare the ingredients and wash them.

Tear the eggplant by hand into pieces as shown in the picture.

Cut all ingredients and set aside

Heat oil in a pan, add appropriate amount of sugar, stir well and then add all the ingredients except eggplant

Add appropriate amount of light soy sauce

Add the eggplant and stir-fry for a few times

Stir fry a few times. Add just the right amount of water, not too much.

Cover and simmer over high heat for a few minutes
