Homemade delicious skin jelly
Overview
I have been making skin jelly recently. I went to the market yesterday and bought some pig skins. I just had time to make it this morning. I was in tears just talking about plucking the pig hair and scraping the grease, but the finished product is pretty good and my sister likes to eat it. The chili sauce that comes with the salad dish tastes pretty good.

Ingredients
Steps
-
Wash the pig skin and set aside.
-
Use tweezers to remove the hair from the pig skin.
-
Turn over and use a knife to scrape away the fat from the pork skin.
-
tablespoons cooking wine, a few ginger slices and star anise.
-
Put the pork skin into the pressure cooker, pour in the cooking wine, ginger slices and star anise, do not press the valve, bring to a boil over high heat, and cook for another 3 minutes.
-
Boil the pork skin and put it in cold water.
-
Take the pig skin out and scrape the grease again.
-
Wash well, then put it into the pressure cooker without pressing the valve. After boiling over high heat, cook for another 3 minutes.
-
Take the pork rinds out of the pressure cooker again and put them into cold water. Scrape the grease again.
-
Cut into strips with a knife.
-
Chopped pork rinds.
-
Pour the pork skin and water into the pressure cooker according to the ratio of 1:2.5, and add an appropriate amount of salt. After boiling over high heat, turn to medium-low heat and cook for 45 minutes, then turn off the heat and wait until it cools down and pour it into a crisper. (You can put it in the refrigerator, take it out when you want to eat it, and just cut it into a piece)

Cut the jelly of pork skin, add soy sauce, oil, a little salt, minced garlic, chili, crushed peanuts, and green onions and top it with seasoning. It tastes very delicious. (Time is tight, so I put in the chili oil that came with the salad, and it tastes very good.)
