Cut the back of the shrimp to remove the shrimp thread (cut half way so that the shrimp will curl up and look beautiful when fried), wash and dry the shrimp with kitchen paper, put it in a bowl and add a little salt to taste, then add egg white and a little starch to mix well, and let it sit for 10 minutes (the longer it is, the more flavorful it will be)

Coat the shrimps with starch for the second time. You can use more starch to completely cover the shrimps

Heat the pot and pour in an appropriate amount of cooking oil (the shrimp are not large in size, so don’t use too much oil. Don’t pour half the pot of oil!). When the oil temperature is 6 or 7, add the flour-coated shrimp one by one

Add the shrimps and fry over low heat until golden brown. Take them out and set aside. After taking them all out, turn on high heat and continue to heat the oil. Then fry the shrimps again (more fragrant and crispy). This will only take a short time to take them out and put them on a plate!
