  1. Pour the spareribs, green onions, ginger slices and cooking wine into a pot of water and bring to a boil. Remove the foam and simmer over low heat for half an hour.

  2. Pour 2 bags of sauerkraut into the pot and continue to simmer for half an hour.

  3. Add salt to taste and continue to simmer for about five minutes. You may or may not add some pepper to taste.
