Overview
Toon buds are a seasonal delicacy. Generally, toon buds are best eaten between Qingming Festival and Guyu. After Guyu, toon buds will become lignified. After Guyu, toon buds grow the fastest and lose their mellow flavor the fastest. Therefore, these few days after Qingming Festival are when the toona buds are most flavorful and tender. Every year I always buy some toona buds, wash them and knead them with salt. After they ferment a little and become fragrant, I bag or bottle them and freeze them for winter consumption. It is best to choose the toona buds that grow on the big trees of farmers; the leaf stems are fat, the leaves are green, and the tips of the new leaf buds are brownish red. This kind of toon is the tenderest and most fragrant, and the most delicious when eaten raw. The word "knead" is used to knead toon buds, which shows people's love and care for toon buds. Only kneaded toon buds can truly produce the toon flavor they deserve. Only kneading can spread the salt evenly in the toon sprouts, and finally make delicious toon sprout pickles. Some people like to be lazy and directly sprinkle coarse salt on the toon buds for pickling. In this way, the salt particles are scattered on the toon buds, and the toon buds produced have different tastes and uneven salinity. The flavor of the kneaded toona buds will only come out after being sealed well and allowed to stand for a week. These kneaded toon sprouts have become a rare item in winter. Every time I eat them, I pinch a few, chop them into noodles, or use them to fry a few eggs...the whole house is filled with fragrance.

Wash the toon buds, take them out, and dry them in a cool place (do not expose them to direct sunlight, otherwise the toon buds will lose moisture and become soft and black).
