Overview
As a Northeasterner, this dish has been my favorite dish since I was a child. I remember when I was a kid, someone invited our family to dinner. I went in at the end and my uncle asked me what I wanted to eat. It shows how much the whole family loves this dish! I have never cooked this dish at home before. I don’t know if it’s because my mother doesn’t know how to cook it, but it’s troublesome. Now that I’m out, I particularly like these dishes that I often eat at home!

Cut the potatoes into thin hob pieces. Sorry, I forgot to take a photo after cutting the potatoes. I didn’t remember until they were in the pot, so I’ll use fried ones instead

I should use vegetable peppers or ordinary chili peppers, but I forgot to buy them yesterday, so I can only use this chili pepper instead. The finished picture will be somewhat unsightly, but the taste will not be affected. Besides, few people eat the chili peppers when we eat a dish

Prepare the sauce: mix salt, three spoons of water, one spoon of soy sauce, one spoon of starch, and minced garlic and mix well

Fry the eggplant, potatoes and chili in oil separately. Fry the potatoes and eggplant until they are cooked. It is ready when you hear a rustling sound. Note that 30 seconds is enough to blanch the chili in the oil

Pour out the frying oil. There is no need to leave any oil in the pot. Just heat the pot and put the three items that have been oiled just now into the pot and stir-fry

Done! Like I said just now, using the thin peppers doesn’t look very good, but it doesn’t affect the taste. It’s really delicious!
