Purple Cabbage Egg Salad
Overview
I have been struggling with a question: Are eggs considered vegetarian? Personally, I don’t think it can be considered a vegetarian diet, but if you think about it, for those friends who don’t eat meat, if they don’t eat eggs, there will be less to eat. Well, let’s put eggs in the vegetarian diet. Let’s not be so strict or serious, okay? Mima's breakfast must include eggs, boiled eggs, steamed eggs, scrambled eggs, fried eggs, egg drop soup, egg pancakes, various ways to eat them, ensuring one egg per person. It doesn’t feel like autumn at all. You can even break into a sweat when you enter the kitchen so early in the morning! It’s better to eat something lighter. Mix the hard-boiled eggs and purple cabbage together. Mima specially mixes the egg yolks with yogurt to make one flavor, and the egg whites and vegetables to make one flavor. It's pretty good. The whole salad tasted quite good. The only drawback was that the egg yolk was not crushed enough and the flowers failed to be squeezed in! Doesn't affect eating. The food is served.
