Steam sweet potatoes, crush them into puree, add appropriate amount of glutinous rice flour and white sugar,

Stir evenly until it becomes a relatively sticky dough,

Use disposable gloves to make small balls,

Heat the oil to 70% (you can feel the obvious heat even if you place your hand about 20cm above the oil). Use two spoons to put the sweet potato balls into the hot oil. (It's okay if the surface is not smooth. It will become very smooth after frying.)

Wait until it becomes puffy on its own, don't stir it up in the middle,
