I grew the potatoes at home and bought the white vinegar. I haven’t made it for a long time, but I am still so skilled.

Cut the red pepper into sections, mince the garlic, and chop the green onions.

Soak the shredded potatoes for 10 minutes, then pour out the water, and then wash them several times until they are clear and transparent.

Pour cold water into the pot, wait for the water to boil, add shredded potatoes, blanch the water, take it out, and run the cold water through it.

After the water has passed, heat the oil in a pot, add the red pepper segments and Sichuan peppercorns to the pot and simmer, add shredded potatoes and stir-fry briefly, add chopped green onion and minced garlic. After stir-frying, add salt and Sichuan peppercorns. After stir-frying, pour in white vinegar and stir-fry a few times.
