Wash the mushrooms and remove the stems, rub a little salt on the stems and marinate for 10 minutes.

Add a little light soy sauce, cooking wine, oyster sauce, pepper, and a little salt to the pork filling and stir evenly.

Pour out the water in the middle of the marinated mushrooms and put some meat filling into the middle of each mushroom. Do not fill too much.

Then crack quail eggs on top of the meat filling. Steam in a steamer for about 15 minutes.

Take out the steamed mushrooms and pour out the steamed soup.

Pour the steamed mushroom juice and the water for pickling the mushrooms into the wok, then add 1 tablespoon of oyster sauce, and pour in a little water starch to form a thin gravy.

Pour over the mushrooms.
