Add an appropriate amount of water to a small pot, bring the red dates to a boil, then turn to low heat and simmer for about 5 to 10 minutes.

Use a knife to remove the date core

Put it into a food processor cup, add water and stir to make a fine jujube puree. Set aside.

Place egg yolks and whites separately in clean bowls.

Stir the egg yolks evenly and then add the jujube paste and stir

Pour in the corn oil and mix well

Sift in the low-gluten flour and mix well. Set aside.

Crush brown sugar with a spoon

Place the egg whites in a bowl of warm water, use an electric mixer to beat at low speed until foamy, add a few drops of white vinegar

Add brown sugar in two batches and beat at medium speed

Whip until dry and foamy.

Take 1/3 of the egg white and put it into the egg yolk paste, stir evenly with a spatula

Pour back into the egg white basin

Mix well

Apply a thin layer of butter to the inner wall of the mold and pour in 70% of the cake batter.

Preheat the oven, put in the middle and lower layers, and set it to 140 degrees for about 40 minutes.
