Clean the fish, remove internal organs, black lines, gills, etc., and rinse with running water.

Cut the fish vertically into pieces.

Put it in a basin, marinate it with egg white, a little cooking wine, white pepper and salt for fifteen minutes.

Heat a little cooking oil in a pan, add fish pieces, fry over low heat until both sides change color, remove and set aside.

Prepare sauce and toppings. Sauce: 1 tablespoon oil, 1 tablespoon light soy sauce, 1 tablespoon tomato paste, a little sugar and salt, put in a small bowl and set aside. Prepare a can of beer (500ml) and accessories: dice tomatoes and green peppers.

Slice ginger, dice garlic, and cut small red pepper into sections. Heat the oil in the pan, add it and turn it twice.

Add diced tomatoes.

Stir-fry for a minute or two to create a red soup.

Add the fried fish fillets. Pour in the entire can of beer. Bring to a boil over high heat and immediately turn to low heat and simmer.

After five minutes add the green pepper cubes and sauce.

Cook over low heat for another five minutes and it's ready to serve.

Sprinkle in chopped green onions and coriander and serve.
