(The shrimp balls here are fresh shrimps peeled by Zerui’s mother. They only have a little salt as a base and are not pickled with too many seasonings. If they are frozen shrimps, you can add a little white pepper and a little cooking wine to remove the fishy smell).

  4. Use a knife to scrape off the skin of the loofah, cut off both ends, and cut the loofah into pieces of similar size. Don't cut it too big or too thick, otherwise it won't be cooked easily. You can also slice it into long strips or dice it, whichever you like. Slice garlic and set aside.

  7. After sauteing the garlic slices, add the loofah and stir-fry over high heat. Quickly stir-fry until the luffa is broken. Young luffa is easier to cook. Do not fry it for too long. Over time, it will become soft and tender, and the texture will no longer be crisp and tender.

  8. Stir-fry until the loofah changes color slightly, add the fried shrimp balls, stir-fry quickly and evenly, add a little salt and a little chicken powder. (The fire needs to be strong and the action needs to be fast, as the soup will easily come out after a long time).
