Dice garlic and ginger, shred and set aside.

Then cut the eggplant into strips, wash with some salt and set aside.

Dice Queyang pepper and set aside.

Heat oil in a pan. Pour 20 ml of oil into the pan. The oil temperature is about 80°. Slowly pour the eggplant into the pan and fry until soft as if it has absorbed the oil in the pan. Take it out and set aside. Be careful when taking it out! Eggplants tend to splash oil when they come out of water.

Pour up the oil in the pot and save it for cooking ~ there is a little bit left, still on low heat, add ginger and garlic and stir-fry, then on high heat, add chili peppers, continue to stir-fry, add eggplant, salt, oyster sauce, stir-fry back and forth for about 40 seconds, add 5 ml of water, stir-fry twice and simmer for a while, then it is ready!
