Chop the onion, the smaller it is, the better. Add more oil to the pot, and heat it until it is six-mature. Add the onions and fry over low heat. This process takes about half an hour. The onions should be browned a little darker than in the picture.

There should be a little more tomatoes, two is a bit less, three or four, stir-fry over low heat until they become mushy

Add thick slices of loofah, black pepper and chili powder and stir-fry over medium heat. When the loofah is cooked, add salt and cumin and reduce the juice over high heat.
