Wash the round eggplants and the green peppers. Since there is only half left, I only use so much.

Cut the pepper into shreds and the eggplant into shreds. Put them in a basin and put them in water to prevent oxidation.

Put oil in the pot, add shredded eggplant and stir-fry until soft, then add shredded pepper and stir-fry until raw, then add light soy sauce, cooking wine, and sugar and stir-fry evenly.
