Clean the pomfret and make several diagonal cuts across the fish. Slice onions and ginger, mince garlic.

Heat a wok, add an appropriate amount of oil, add the pomfret and fry until both sides are golden brown.

Add onions and ginger and stir-fry until fragrant, then cook in cooking wine.

Pour in an appropriate amount of boiling water, add rock sugar, add soy sauce, a little vinegar, and cook for about 15 minutes.

When the soup becomes less and thicker, add salt and turn off the heat.
