Braised duck soup with bamboo shoots
Overview
It’s the season to eat fresh bamboo shoots again. Bamboo shoots contain a lot of fiber and are crispy and sweet. They can be cut into shreds and fried or made into soup. Stuffed duck soup with bamboo shoots is also a home-cooked dish in our Chaoshan area. Every household likes to drink this fresh and sweet soup.

Buy bamboo shoots that are large and tender, remove the shells, wash and cut into pieces

Cut the duck meat into cubes and cut the ingredients into small pieces. If you like it spicier, you can add more chili

Add a little oil to the pot, add chili ginger slices and garlic and saute until fragrant

Pour in the duck pieces and jinbuhuan and stir-fry until fragrant (the duck pieces can be blanched in boiling water to remove the blood first. I am lazy, so I just wash it with water several times and put it down for stir-fry)

Add the Shacha sauce and salt and continue to stir-fry until it changes color (adding a little cooking wine will make it taste better, but unfortunately I don’t have cooking wine at home, so I didn’t add it)

Fry the duck pieces until they change color and become fragrant, then add cold water, then add the bamboo shoot pieces, cover the pot and simmer for half an hour

After the soup is cooked, you can add some chicken essence to make it fresher. If you like it more beautiful, you can sprinkle some celery or coriander on top to garnish.
