Overview

I have made dry-fried hairtail and small yellow croaker many times. This time I was the laziest. I omitted the onions, ginger and garlic, and only used cooking wine. Unexpectedly, it was not fishy at all. It tasted like the original fish flavor, crispy on the outside and tender on the inside, super delicious! That’s what I’ll do next!

After the oil is slightly hot, fry the fish over medium-low heat, pour in a small amount of cooking wine to remove the fishy smell, cover the pot, fry the fish until golden brown, flip over, and fry the other side.
