A piece of fresh fish, clean and dry.

Remove the fish meat and cut the belly into pieces. If you don't mind fish bones, you can keep the fish belly.

Peel the fish and cut into thin strips about 1 cm. Add all the ingredients except the cooking oil and marinate for 10 minutes [This process requires a little more time. Let the fish meat be fully marinated].

Heat oil in the pot, enough to cover the fish. The oil temperature is 60% hot, and it will probably bubble when you put chopsticks in it. If you are still unsure, put a piece of fish in it. If the fish bubbles and floats, it proves that the oil is warm enough.

Fry the fish fillets over medium-low heat for 3 minutes, remove and place on absorbent paper and set aside. Many people think that it is normal for the fish meat not to be crispy at this step. The first pass is mainly for setting the shape.

Turn to medium-high heat and increase oil temperature. Fry the fish fillets for another 3 minutes until mature.
