Wash and cut beef brisket into pieces

Pour beef brisket into a pot with cold water, bring to a boil, skim off the foam, drain the water, and set aside

Heat the pan with cold oil and add rock sugar. When the rock sugar melts and becomes darker in color, put the beef brisket into the pan

Fry the beef brisket until it becomes a darker color and turn into a sugary color

Add tomatoes and continue to stir-fry, turn to medium heat

Stir-fry over medium heat until the tomatoes come out of the soup and the skin begins to peel off. Add star anise and ginger

Add hot water, put the fried beef brisket and tomatoes into the casserole, the water should cover the beef brisket

Simmer over high heat for ten minutes, then simmer over low heat for fifty minutes. Add salt, chives and star anise to taste before serving
