A bowl of noodles that conquers your taste buds—Taiwanese beef noodles
Overview
Although I am not a foodie who likes to eat noodles, that does not apply to all noodles. The noodles that I found very delicious were the Taiwanese beef noodles that I had when I visited Taiwan last time. The noodles were soft and chewy, and paired with the well-made beef broth, it was spicy and delicious, and I couldn’t stop eating it. It may be a little tricky to make, but the delicious taste is worth the wait.

Slice garlic, peel and slice ginger.

Heat oil pan. Saute the garlic and ginger slices until fragrant, and fry the beef until the surface turns golden brown.

After the surface of the beef is fried until golden brown, remove it and put it into the soup pot.

In the same pan used to fry beef, add beef bones and fry.

After the beef bones are fried until fragrant, add the bean paste until the bean paste juice is slightly dry. Add water to the pan and bring to a boil.

Pour all the beef bones and water in the pan into the soup pot with the beef.

Add water until all the ingredients are covered, add light soy sauce, bring to a boil over high heat, then turn to low heat and simmer for at least three hours, add rock sugar, and simmer until the rock sugar melts.

After cooking, take the meat out, let it cool and then slice it. Pour a little beef broth in and let the beef continue to absorb the broth. Place in the refrigerator and chill overnight.

Before eating the beef, heat the beef broth. Wait until the soup is boiling hot before adding the meat.

Boil a pot of hot water and simmer the green vegetables until they turn green, then take them out and set aside.

Cook the noodles in a pot with vegetables until the noodles are fully cooked, pour in cold water, drain the water and put it into a bowl.

Pour in the beef soup, top with vegetables and beef slices, and serve.
