Peel the lotus root and clean it

Cut into slices about 2MM thick, not too thick, otherwise it will affect the taste

Boil a pot of water. When the water boils, add the lotus root slices. When the water boils again, the lotus root slices are cooked. Take them out and put them into boiling water or purified water to cool down and rinse.

Shred the green garlic and add salt, vinegar and sesame oil to taste
