Sour plum soup
Overview
Sour plum soup is a good way to relieve the heat in summer. Generally, the sour plum soup in old Beijing is boiled like tea, while when I was a child, the sour plum soup in Henan was slightly thicker. I remember that there was a state-owned restaurant next to Erqi Pagoda in Zhengzhou at that time. In summer, they sold sour plum soup. The price was ten cents a bowl. It was boiled and added with a little starch. It was slightly thick and delicious. So when I went to Beijing to drink the tea-like sour plum soup, I thought the one in Beijing was not authentic, haha. Today I also made some sour plum soup based on my childhood memories based on old Beijing. It feels very friendly!

Ingredients
Steps
-
Wash tangerine peel with clean water
-
Wash hawthorn with clean water
-
Put the black plum, licorice, cloves, rock sugar, washed hawthorn and tangerine peel into the pot, and add about 5 liters of water.
-
Bring to a boil over high heat, then simmer over low heat for about 1 and a half hours, until about 2 liters of water remain. My kitchen has a blue glass color cast,
-
If you look at it under normal light, it’s brown and the color is not very nice
-
In order to make the color more beautiful, add a few roselle flowers and cook for about 5 minutes. This will increase the acidity a little more. The key is that the color will be very beautiful
-
After boiling, add appropriate amount of sugar osmanthus
-
Look, the color is much prettier. At this point, the sour plum soup is actually completed. Let cool or ice and you are ready to enjoy
-
In order to regain the taste of childhood, I also added a little water chestnut powder, because water chestnut powder is suitable for summer consumption. Mix water chestnut powder with cold water into a paste
-
Bring the pot to a boil and add the water chestnut powder little by little, stirring while pouring. Be sure to pour it in little by little. Do not pour it all at once, otherwise the soup will not be transparent enough
-
The cooked sour plum soup has a color cast on the blue glass, which makes it look unrealistic.

Take out a bowl. This is made from home-made water chestnut flour. It is a bit thick, sour and sweet, and has a faint scent of osmanthus. Wouldn't it taste better? !
