Easy to make sweet potato balls

I bought a big bag of sweet potatoes and have been eating them in various ways these past few days. Fortunately, everyone likes what I have made. Today I fried the sweet potatoes and ate them. The sweet potato balls just out of the pan are soft, glutinous and sweet, and the sweet potato pancakes have another flavor. Friends who like sweet potatoes can try it!

First, cook the red bean paste. Put the red beans and rock sugar in the pot. I pressed it twice with a pressure cooker. Taste the sweetness after taking it out of the pot. If it is not sweet, you can sprinkle some white sugar and stir it.

Put it in a food processor and puree it into bean paste.

Steam the sweet potatoes until cooked.

Add glutinous rice flour and stir to combine.

It’s also possible to knead it into a ball, but since I didn’t want to get my hands dirty, I directly used a clay press to mix the dough into roughly the same size.

Form into a ball and roll in sesame seeds.

Take the divided dough and flatten it with your hands, wrap it in bean paste and press it flat again.

Heat oil in an electric pan and fry the sweet potato pancakes until golden brown on both sides.

Heat the oil in the pot until it is 60% hot, add the sweet potato balls, fry slowly over low heat until they float, use a slotted spoon to press the sweet potato balls twice, they are almost done.
