Wash the ginger buds and remove the purple branches. Coriander, chopped green onion, shredded pork, set aside.

Wash and slice the ginger sprouts. What shape to cut depends on personal preference.

Heat the pan, add oil, sauté the chopped green onions until fragrant, add the shredded pork and stir-fry until white, add the ginger slices, stir-fry over high heat and serve.
