Prepare the raw materials (prepare to make two kinds of rice noodles: one with sesame and one without sesame)

Soak appropriate amount of sesame seeds in water for half an hour

Take 90 grams of maltose and add an appropriate amount of water to boil it (about 200 grams of water)

First take 2/3 of the glutinous rice flour

Pour in boiling water and mix well. (You can also pour half of the glutinous rice flour directly into boiling water and cook until it is transparent and sticky, then add the remaining glutinous rice flour and mix it into a dough. The boiled glutinous rice flour will be crispier when fried)

Add the remaining glutinous rice flour and mix into a smooth dough

Then roll it into a 0.5 cm thick dough piece

Then cut into thin strips (you can also divide it into several large sections first and then cut into thin strips)

Then round the thin strips and cut them into small strips

Pour the soaked sesame seeds through a sieve, squeeze out the water and put them in a container

Take some of the cut glutinous rice strips and put them in the sesame seeds and shake them evenly so that the glutinous rice strips are covered with sesame seeds

Fry the sesame ones first, then put an appropriate amount of oil in the pot, put the glutinous rice strips in the pot with cold oil, turn on low heat and fry slowly (don't stir when you first fry, until almost all of them float slowly, stir gently and constantly)

Pour an appropriate amount of sugar and water into the pot with a ratio of 3:1

Simmer over low heat until the sugar thickens and bubbles into a thick consistency (dip some sugar with chopsticks and let it cool for a few seconds to pull out filaments), then turn off the heat

Sprinkle in appropriate amount of white sugar and mix well
