Wash the crucian carp, especially the black membrane inside.

Put a little water in the pot, cook until small bubbles appear, then turn down the heat.

Place the fish on the chopping board and cut with a flower knife.

Put oil in the pot and heat both the pot and the oil.

Turn the fish over when browned.
