As a Beijing girl, I especially like this one. Crispy and fragrant, you can't stop eating it. So when I was making pot stickers, I had some filling left over and made a battered pancake, which is a favorite of the whole family.

Mince the leeks and prepare the ingredients.

Add an appropriate amount of water to the cornmeal and stir with chopsticks. I like to make it a little dry, so the bottom is very crispy.

Beat the eggs and put oil in the pot. After the oil is hot, pour in the egg liquid and use chopsticks to quickly stir it up until the eggs are golden brown.

Chop the leeks into mince, add chopped eggs, add appropriate amount of salt, mix well and set aside.

Pour cornmeal into electric baking pan.

Use chopsticks to spread cornmeal all over the pan.

Use a small spatula to flatten the cornmeal and poke a few holes in it with chopsticks. Prevent the crust from puffing up during baking. I made it very thin so it's extra crispy. Cover the pot and cook for three minutes to set the dough.
