Candied orange peel
Overview
jThis shredded orange peel is very suitable for making dessert fillings. Generally, adding some green and red shreds to the fillings of desserts will enhance the flavor. Because making green and red silk is too troublesome and requires coloring, and I am worried that the pigment is not safe, I make some candied orange peel or grapefruit peel myself. Whether it is used as a filling for glutinous rice balls or moon cakes, I chop it up and add a little bit. It tastes particularly good.

Steps
-
After peeling the orange, cut off the white part inside, leaving only the yellow peel. The white part is too bitter
-
After it is done, wash it with salt water, cut it into thin strips, add 2 grams of salt and mix evenly.
-
I used old rock sugar, crushed it with a food processor, put in the rock sugar, mixed well and marinated for 1-2 hours
-
Marinate until the rock sugar melts completely
-
Boil the juice until it is almost dry
-
After it cools down, sprinkle some rock sugar powder on it, put it in a sealed box, and let it marinate for a few days to taste better.
