Overview
Scallion-wrapped cypress is a traditional snack of the Han nationality in Hangzhou, Zhejiang province. It is made of fried dough sticks wrapped in spring pancakes, green onions and sweet noodle sauce. Huiner is fried dough sticks. In Zhejiang dialect, its full name is fried juniper.

Prepare materials.

Wash and break the green onions and cut the fried dough sticks into four quarters.

Wrap green onions and fried dough sticks in spring roll wrappers.

Heat a pan over low heat, add a little oil, and put the wrapped scallions into the pan with the opening facing down. Fry until set and then turn over until golden brown on both sides. Just smear it with sweet noodle sauce, or add hot sauce.
