Chop the meat into minced meat, add salt, chicken essence, white pepper, cooking wine, and eggs and stir in one direction.

Mix the meat filling and set aside.

Wash the lotus root, peel it and grate it into shreds.

Chop the lotus root into fine pieces again.

Use gauze to squeeze out the juice from the lotus roots. (Leave a little for later use)

Add the lotus roots that have been squeezed out of the water into the minced meat and mix well.

Add the reserved lotus root juice to the green onion and ginger and use a cooking stick to stir into the green onion, ginger and lotus root juice. Add it to the raw materials, then add the light soy sauce and mix well.

Gently pinch the ingredients with your hands and shape into balls of suitable size, then put them into a six-mature oil pan with a spoon.
