Rock sugar pear jam
Overview
Rock sugar and snow pear jam is a handmade jam that relieves coughs and moisturizes the lungs. It is made with snow pear and rock sugar slowly cooked together.

Soak the jam bottle in boiling water for 15 minutes one day in advance;

Then dry it and set aside.

Ingredients preparation: 600g of Sydney pear pulp, 2 lemons (35g of juice), 320g of rock sugar, 20g of wolfberry, 150g of cold water;

Wash the lemon, cut it in half and squeeze the juice, take 35g and set aside;

Wash and peel the pears, cut them in half and core them, cut them into large pieces and divide them into equal portions;

Chop half of it;

Use a food processor to puree half of it;

Mix the chopped pears and puree together.

Pour in lemon juice and rock sugar and mix well;

Add wolfberry and stir evenly;

Seal it with plastic wrap and put it in the refrigerator for 10 to 12 hours. Take it out and stir it every 3 to 4 hours; PS: If you find it troublesome, you can remove this step;

Take it out and pour it into the pot (first add 150g of cold water to the pot);

Heat over medium-low heat, stirring occasionally;

After boiling, remove the layer of astringent juice on the surface;

Continue to cook until the jam is reduced to only 1/2 and the pear becomes transparent;

Turn off the heat when the jam becomes thick;

Put the jam into a bottle, cover it tightly, invert it for 30 minutes, clean the bottle, leave it at room temperature for 3 to 7 days, and then put it in the refrigerator.
