Steamed Prawns with Chopped Pepper and Garlic
Overview
It’s rare to find good-quality prawns. The prawns this time were very fresh and quite big. I simply processed the prawns at home, used vermicelli as a base, then poured them with minced pepper and garlic sauce and steamed them in a pan. No oil or smoke. Very simple and delicious!

Steps
-
First, prepare the minced pepper and garlic sauce. Chop the whole garlic and sprinkle with a little fine salt.
-
Pour oil into a pot over medium heat. When the oil burns until it smokes slightly, immediately turn off the heat and pour into the minced garlic while it is hot. Pour slowly and be careful not to burn yourself with the splashing oil stars. (You can also directly pour the minced garlic into the oil pan and stir-fry. This step can be done according to your own habits)
-
Then add a little chopped pepper and light soy sauce to the minced garlic, mix with a little cold boiled water, and stir evenly. Friends who don't like spicy food can omit the chopped pepper.
-
prawns, rinsed and drained. At the same time, soak the vermicelli in warm water.
-
To open the back of the shrimp, first cut off the shrimp tail and tail, and use a knife to cut along the back of the shrimp, trying to cut to the bottom without cutting off, so that the shrimp body can be fully expanded. After picking out the intestines, pat the shrimp body gently with the back of the knife a few times to prevent the shrimp meat from rolling into a ball during steaming.
-
Cut off the soaked vermicelli slightly, drain and spread on a plate. Then put the prepared shrimps on top.
-
Pour the prepared minced pepper garlic sauce over the shrimp. You can pour more garlic sauce. The excess garlic juice will flow into the vermicelli, and the steamed vermicelli will be equally delicious. Reserve a little minced pepper and garlic sauce for serving.
-
Set up a steamer, wait until the water boils, put the shrimps in, and steam over high heat for 5 minutes.
-
After taking it out of the pan, pour a little pepper and garlic sauce over it.
