Hubei's authentic Yangxin oil noodles are a well-known local home-cooked noodle in Yangxin and an essential food for entertaining guests. Because of its delicious, sweet and lingering flavor, many people who have eaten Yangxin chicken soup oil noodles are deeply impressed. In 2011, Huang Xiaotu's pure handicraft of cooking oil noodles was registered as an intangible cultural heritage by Hubei Province. Oil noodles represent blessings and good health and longevity in Yangxin. Whenever the elderly celebrate their birthdays, women are in confinement, babies are born, children celebrate their first birthday, weddings, etc., especially during the Spring Festival, Yangxin locals use oil noodles to entertain relatives and friends.

  1. Take 480g of shiitake mushrooms, soak them in warm water, remove the stems, cut in half and seal.

  2. Wash the chicken and cut it into pieces. It doesn’t matter if it’s a little larger. Put it into a pot with water and boil it together with 3 slices of ginger. Blanch it for 3 to 4 minutes to skim off the blood, then take it out and set aside.

  3. Add water to the pot, pour in the chicken pieces to be used, add a few slices of ginger and a small amount of wolfberry.

  4. Bring to a boil over high heat, then simmer slowly over low heat for about 40 minutes and set aside.

  5. Take another pot of boiling water, add noodles, boil the water and let it sit for about 2 minutes.

  6. Blanch the vegetables in the noodle cooking water.

  7. Place the blanched vegetables on the noodles, add the stewed chicken soup and serve.
