Stir dry and wet ingredients until the surface is smooth, add unsalted butter and stir the dough to pull out the mask, add orange jam and stir evenly.

Ferment at room temperature for about 45 minutes.

Divide the dough into 80g pieces and rest for 20 minutes.

Roll the dough into a long loaf.

Cross the two long strips of dough.

Place on a baking sheet and ferment at a temperature of 30°C and a humidity of 80% for 40 minutes.
