Wash the pork belly and cut into pieces, blanch in a pot of cold water to remove impurities and foam.

Blanched pork belly.

Rock sugar, star anise, ginger cubes.

Put the pork belly in a hot pan and simmer over low heat.

After about 5 minutes, stir-fry out the oil from the pork belly and scoop out the excess oil. Add rock sugar and ginger and stir-fry until browned. Add cold water and bring to a boil over high heat. Reduce heat and simmer for 40 minutes.

After 40 minutes, when it is about to come out of the pan, pour in two tablespoons of dark soy sauce, add salt to taste, and remove the juice.
