Taro ball jelly comparable to fresh taro jelly
Overview
Taro balls and roasted jelly are both famous snacks in Taiwan. I used to like the taro balls and jelly made from fresh taro balls, but recently the store near my home closed down. It seems I have to do it myself. I made it once and was praised by my family, saying that it tastes the same as the fresh taro balls. This is the biggest encouragement to me. After I posted the picture on WeChat Moments, friends started asking how to make it, so I might as well write it down.

Stir the grass jelly powder into a paste with a small amount of water, then add the remaining water and sugar and stir evenly. Stir while heating until it boils. Pour it into a container to cool and refrigerate for later use.

tablespoons of brown sugar (adjust the amount of sugar according to your favorite sweetness), 6 longans, add 1 bowl of water, boil over low heat for 15 minutes, cool down, remove the longans and discard, set aside the brown sugar water.

Steam the pumpkin and purple sweet potato and mash them separately.

Add tapioca starch and knead until smooth.

Shape into long strips and cut into small pieces.

Sprinkle with starch to prevent sticking.

Bring the water to a boil and add the taro balls.

After the taro balls float, cook for another 5 minutes until cooked. Pour in cold boiling water and set aside.

Take a small bowl, add boiled brown sugar water, add taro balls and cut grass jelly, and a tempting dessert is ready.
