I am a big fan of grids. I originally wanted to make four grids, but someone said that the more grids the better, so let’s give it a try and make bread without any agreement...

Steam the purple sweet potato and grind it into a fine purple sweet potato puree with a spoon.

Two doughs of different colors are kneaded using the post-oil method until they are fully expanded, and then placed in separate containers for basic fermentation.

After fermentation is completed, divide the dough of the two colors into eight portions.

Use a rolling pin to roll each piece into an oval shape, roll it up from top to bottom, and let it rest for 5 minutes.

Then roll out each piece of dough,

Put it into the mold while standing for the second fermentation. (I used a 13*13*7 square toast box)

Ferment until the mold is nine-tenths full.

Place in the preheated oven, set the upper and lower heat to 180 degrees, and bake on the middle and lower racks for 35 minutes.
