Salted egg mustard soup
Overview
I used to pass by an egg store where I lived, and I would often buy eggs there. One time I bought a few salted eggs, and the boss asked me how to cook them. Unless I bake them, I usually steam them whole and eat the yolks. Otherwise, how can I eat the egg whites if they are so salty? Then he actively recommended me salted egg soup and salted egg mustard soup. Later, I moved to a dormitory and no longer took that route, but I still remembered his recommendation and tried it a few days ago.

Steps
-
Wash and cut mustard greens.
-
Prepare some slices of ginger.
-
Crack the salted eggs into a bowl. Because I need to boil the egg yolks first and feed them to my children.
-
Pour water into the pot, add ginger, and bring to a boil.
-
Clip the egg yolk out and put it into the pot, which also contains some protein.
-
When the egg yolks are estimated to be cooked, add the mustard greens.
-
Add oil, a little sugar, and cook until the mustard greens are just right.
-
Pour in the egg whites and stir slightly. Egg whites are easy to cook.
