Dry fried saury
Overview
Bought some saury fish. This kind of small saury is relatively cheap. The small saury you buy is simply pickled, patted dry in flour, fried until crispy, and then served with salt and pepper. It is really charred on the outside, tender on the inside, crispy and delicious.

Main ingredients: saury, salt, peppercorns, rice wine

Remove the internal organs from the saury fish head and put it in a container. Add salt and peppercorns

Add 2 teaspoons cooking wine

Pickle evenly and marinate for more than 2 hours

Drain the marinated saury, apply a layer of dry flour evenly, and shake off excess flour

When the oil temperature is 60-70% hot, add the saury dipped in flour and fry.

Fry until golden and crispy, remove and control oil

Just sprinkle some salt, pepper, pepper or chili powder according to your own taste.
