Sweet potato and boiled seabass
Overview
I originally wanted to cook sauerkraut fish, but I didn’t see any sauerkraut made by the villagers for sale. I didn’t want to sell the kind packaged in supermarkets, let alone buy sauerkraut fish feed. I thought about just pressing and cooking it with sweet potatoes. It tasted better than sauerkraut😊 Sweet potatoes are a kind of melon that looks similar to cucumbers. It is a specialty of Shatou Town. It is sliced and sun-wrinkled and then pickled with chili and salt. It tastes very crisp, sour and very appetizing. It can be eaten directly, stir-fried alone or with meat.

Cut the seabass, add starch, pepper, and salt and mix well. It is best to marinate it in advance. I mix it well and put it in the refrigerator for two to three hours. I usually cut the fish into larger pieces instead of fillets, because the fish fillets tend to fall apart when eaten, especially if the two children can turn them over.

Prepare to squeeze the sweet potatoes. Originally, they put chili pepper in when pickling them.

Heat oil in a pan, add garlic and saute until fragrant.

Add sweet potatoes and squeeze, add some light soy sauce and sugar and stir-fry until fragrant.

Add appropriate amount of water.

Add ginger and salt, boil the water and add large pieces such as fish heads.

Then add smaller pieces of fish and continue cooking.

When the large pieces of fish are almost cooked, if there are any thin fish fillets, add them last.

Once the fish fillets are cooked, you can turn off the heat and take them out of the pot. They are sour and spicy, and the sweet potatoes are still crispy.
