Soak the dried whitebait until soft and wash it. Add oil to a hot pan. The amount of oil should be more than when cooking. Fry the whitebait over low heat until golden and crispy

Add minced ginger, pepper powder, chili oil, soy sauce and cooking wine and stir-fry until fragrant

Add salt, stir well and serve! It’s also great for making snacks
