Dried sea cucumber. (I will send out more each time and put them in the refrigerator to freeze.)

Rinse the sea cucumber with water, put it into a large pot, fill it with more than half of the water, bring to a boil, turn off the heat and simmer overnight. (The pot must be clean and oil-free.)

Simmered all night.

Rinse once.

Soak in clean water for a day. Change the water to boil in the evening, turn off the heat and simmer for one night, then change the water the next day and soak it for a day. Depend on the condition of the sea cucumber. If it is still hard, boil it and simmer it for another night.

After three firings and three soakings, it is basically ready. Use a brush to remove the remaining lime on the surface. (With good quality sea cucumbers, after braising, the ash has almost completely fallen off. This brush I use is specially used to brush sea cucumbers and abalone. It sounds very boring, but in fact I don’t use it a few times a year. 😄)

Use scissors to cut in the middle of the belly.

Clean the intestines in the stomach, etc.
